Raising, Processing and Marketing Grass-Fed Livestock

Our speakers are well known for their innovative approaches to organic and grass-fed livestock production. Kathy is the Food Advocacy manager at TomKat Ranch Educational Foundation/LeftCoast GrassFed. By managing LeftCoast GrassFed, Kathy is responsible for coordinating cattle processing and product marketing. Will Harris is a fourth generation farmer who annually raises 700 beef cows, 400 sheep, 50 goats, 30 sows, 150 rabbits, 300,000 chickens, 3,000 geese, 3,000 ducks, 5,000 turkeys and 5,000 guinea fowl, all organically and on pasture. He built a USDA inspected on-farm beef and poultry abattoir. Markets include groceries, restaurants, online, through CSA and through an on-farm store.
